Getting the temperature right

The dial is only half the story. Many home ovens run 10–25 °C away from the setting, which is why an inexpensive oven thermometer is one of the most useful baking tools you can own. Preheat for at least 20 minutes (longer with a baking stone or steel), and bake on the middle rack unless the recipe says otherwise. What is 350 °F in Celsius?

350 °F is 176.7 °C, which recipes round to 180 °C (160 °C in a fan oven, gas mark 4). It is the most common baking temperature for cakes and cookies.

How do I convert Fahrenheit to Celsius?

Subtract 32, then multiply by 5 and divide by 9. For 400 °F: (400 − 32) × 5 ÷ 9 = 204 °C, usually written as 200 °C.

How do I convert Celsius to Fahrenheit?

Multiply by 9, divide by 5, then add 32. 180 °C × 9 ÷ 5 + 32 = 356 °F, which recipes call 350 °F.

Should I lower the temperature for a fan oven?

Yes. Most manufacturers and recipe writers suggest about 20 °C (25 °F) lower for fan or convection ovens, or the same temperature with a shorter bake. Check early the first time.
